Girl Scout Troop #44365 cooking with the Nani's

Intergenerational Activity with the Nani's from SAIVA

Girl Scout Troop #44365 created "The Junior Chef's Cookbook" in collaboration with SAIVA. The troop documented recipes from SAVIA's "Cooking with Nani" program videos to create this cookbook. Each recipe lists the "Cooking with Nani" video link that can be accessed from SAIVA's account. 


They also created their own kid friendly recipes and a cookbook to share with younger generation.

Aarika's Cheesy Garlic Bread

Ingredients :

o 2 loaves of French Bread (freshly Baked) 

o Garlic Salt
o Garlic
o Parsley (fresh cut preferred)

o Thyme
o Red chili flakes
o Black Olives
o Parmesan cheese
o Shredded Cheese(4 seasons)


Process :

  1. Get the fresh French Bread loaf and make a big horizontal cut in between to make it into two big pieces of bread. 
  2. Spread the shredded cheese generously over the pieces of bread. 
  3. Sprinkle the garlic salt, freshly chopped parsley, fresh cut green chilies (optional),put cut black olives and top it with parmesan cheese as per taste.

Ingredients :

1 cup diced and dried apricots

1 cup dried cranberries

1 cup golden raisins

 1 cup unsalted raw sunflower seeds
1 cup dried unsalted pumpkin seeds.


Directions: 

Then mix all the listed ingredients together.

Tanishka's Allergen Free Humus

Ingredients :

1 (15oz) can chickpeas, 1 small garlic clove, minced, 2-3 tablespoon extra-virgin olive oil, 1-2 teaspoon ground cumin, 0.5 cup water, 1 teaspoon paprika, 1 jalapeno (optional), salt and pepper to taste, 2 teaspoon chopped coriander.


Directions:

  1. In the bowl of a food processor, combine chickpeas, garlic clove and lemon. 
  2. Process for 1 minute. 
  3. Scrape the sides and bottom of the bowl. Add extra virgin olive oil, cumin, chopped coriander, salt, pepper and process for 30 seconds more. 
  4. Add water and process for another 30 seconds to make the hummus smooth and creamy.

Directions:

  1. Use any bread of your choice (whole wheat preferable). 
  2. Spread the hummus (recipe #3) on both the sides
  3. layer with cut cucumber circles. 
  4. Sprinkle some black pepper 
  5. Cut the sandwich in half.

Veeksha's Carrot Noodles

Ingredients:
Carrots, scallion, pepper, salt, avocado, and zucchini. 


Materials:
Peeler, pan, bowl, and knife.

Steps:

  1. Wash all the vegetables and peel the carrot’s skin.
  2. Once done, peel it again into long strips which will be our noodles, and
    put it aside.
  3. Cut and fry the zucchini and avocado.
  4. Puttheminabowl.
  5. Chop up the scallion and put it in the bowl.
  6. Take the carrota nd fry.
  7. Add salt/pepper.
  8. Mix all of them together and enjoy!.

Ingredients:
Lettuce, tofu, bell pepper, zucchini, salt, and pepper. 


Materials:
Knife, plate, and pan.

Steps:

  1. Wash all the vegetables and take a leaf of the lettuce.
  2. Get your tofu, cut it up into cubes, and fry.
  3. While it’s frying, chop up your bell pepper and zucchini.
  4. Putthelettuceleafontheplateandinsideputyourvegetables.
  5.  Add the amount of salt and pepper you desire. 
  6. Enjoy!

Veeksha's Banana Bread

Aadhira's Mango Truffles

Ingredients:

Bananas(2), eggs(2), almond flour (4 cup), sugar/jaggery(1/4 cup), butter(1/4) ,baking soda (1/2 teaspoon), and baking powder (1/2 teaspoon).


Materials:
Bowl, something to mix, and a metal loaf pan. 


Steps:

  1. Get two bananas and mash them up in a bowl.
  2. Add two eggs.
  3. Add 4 cups of almond flour.
  4. After that, you add 1⁄4 cup of sugar/jaggery. 
  5. Melt 1⁄4 of the butter and put it in the bowl.
  6.  Add 1⁄2 teaspoon of baking soda and baking powder(opt.) to the bowl. 
  7. Mix all of the ingredients in the bowl.
  8. Get a metal loaf pan and pour the mixture into the pan.
  9. Bake for 30 minutes at 350 Fahrenheit.

Aadhira's Mango Truffles

Aadhira's Mango Truffles

Ingredients:

●  Mango - 1.2 cup

●  Vanilla Essence - 1/4 tsp

●  Cardamom powder - 1/4 tsp

●  Sugar - 1 tbsp

●  Madeleines - 2

●  Badam/Pista (optional) for garnishing


Process :

  1. Blend the mango into mango puree
  2. Add vanilla essence & blend for few seconds
  3. Add powdered sugar & blend again for few seconds
  4. Add cardamom powder & blend for 1 minute
  5. Take out mango puree & transfer to a bowl
  6. Wash the blender & blend the madeleines to crumbs
  7. Add the crumbs to the mango puree & fold into dough texture(will still be liquidy)
  8. Put in freezer for 30 minutes
  9. Take out of freezer and mold into balls(when turns little bit liquidy again put in freezer then keep going)
  10. To serve, put it in the freezer for 5 mins then eat.


Aadhira's Fruit Kebab

Aadhira's Fruit Kebab

Ingredients:
(Use desired amount of fruits)

● grapes
● cantaloupes 

● mangos
● apples
● strawberries 

● oranges


Process :

  1. Cut the cantaloupe,mango,apple & strawberry to desired shape & size
  2. Put on the skewer in desired pattern
